I honestly have never grilled alone. While my hubby was away recently, I decided to take a stab at it. I had a bunch of random veggies and shrimp, but didn’t really know how to cook them all seperately. I love the Grilled Shrimp & Sausage Foil Packets so much that I thought up another variation. Though this recipe also features shrimp and corn, it comes out to be sweeter than the original recipe because of the onion and lemon. It also doesn’t use Old Bay or butter, which allows the red onion to infuse the shrimp and corn thoroughly.

Sweet Shrimp Foil Packets

Ingredients
  • 1 ears corn chopped in quarters length-wise
  • 5 shrimp thawed or raw
  • 1/4 red onion quartered
  • 1/2 lemon sliced
  • 1 clove garlic
  • 2 tbsp parsley
  • 2 tbsp olive oil
  • 3 tbsp chimichurri (salsa verde is also ok, add more parsley if you don't have it)
  • salt to taste
  • pepper to taste

Ingredients
  • 1 ears corn chopped in quarters length-wise

Instructions
  1. Turn on the grill, medium heat.
  2. Peel off one sheets of foil, about 2 feet.
  3. Place all the ingredients on one side of each sheet.
  4. Fold the sheet in half, so the contents are in the middle. Then, fold over a half in section of each side, twice or three times - so you have a sealed pocket.
  5. Place on the grill for 15-20 minutes.
