This recipe and the diligent instructions were passed down by a Spanish baker. I’ve baked this easy bread a few times and there are two things that I’ve learned. First, the flour used can definitely change the taste of the bread. Most people don’t think much about what kind of flour to buy beyond unbleached, whole wheat or bread flour; but I used Sicilian flour (Majorca from Gustiamo) one time and it definitely changed the taste of the bread. So, try different types of flours and brands of flours until you find the right flavor for you. Second, be diligent about kneading. When it says to knead, knead for at least five minutes. Just turn on some music and knead along to the tempo. Kneading creates gluten and distributes air.

  • 1 Package active dry yeast
  • 3 Cups warm water
  • 7 Cups flour any kind will do
  • 2 Tsp salt
  • 1/4 Cup olive oil

Instructions
  1. Mix the yeast in the warm water let sit in a warm place for 10 minutes.
  2. Mix the salt with the flour in a large bowl.
  3. Using your hands, mix in the oil to the flour and salt.
  4. Slowly pour in the raised yeast while working the dough with your hands. The dough will be sticky. Knead for at least 5 minutes.
  5. Grease the bowl and place the dough in it. Cover the bowl with a damp towel and set in a warm place until the dough has doubled in volume (about an hour).
  6. Once again, remove the dough and knead it again, to remove air pockets and until the dough feels smooth. Return the dough to a covered bowl and let it rest for 15 minutes.
  7. Cut the dough in half and fold each piece in on itself to form two loaf shapes.
  8. Place on greased pans and cut slots on top of bread. Let sit for another 30 minutes.
  9. Pre-heat oven to 450 and place the pan in the hot oven. Bake for 30-35 minutes.
