This is another go-to recipe. It is a quick biscuit recipe for folks who dig or need gluten-free goods. I am lucky enough to live in a Wegmans state and the great grocery chain now makes a whole slew of gluten-free products. As my husband tries to be gluten-free for health reasons, I am always looking for quick recipes. The Wegmans GF All Purpose Baking Mix is perfect for pancakes and biscuits.

The box is not very big, but there is enough mix in the box to make three times this recipe. The batter comes out a teensy bit sweet, but I did see a comment that one user made a cheddar variety. I added a bit of shredded cheddar, parsley, and garlic powder to one batch and they came out great. I am sure that the same biscuit recipe would be great with additions of dried cherries or blueberries. The biscuits come out light and fluffy.

Gluten-Free Biscuits with Wegmans Gluten Free All Purpose Baking Mix

Ingredients
  • 1 cup Wegmans Gluten Free All Purpose Baking Mix
  • 3 tbsp butter or shortening
  • 1/4 cup milk cashew or almond works
  • 1 egg

Ingredients
  • 1 cup Wegmans Gluten Free All Purpose Baking Mix
  • 3 tbsp butter or shortening
  • 1/4 cup milk cashew or almond works
  • 1 egg
Instructions
  1. Heat the oven to 400.
  2. In one bowl, mix the butter and flour until combined. You can use a mixer and leave it running until you add the next part.
  3. In another bowl, scramble the egg and milk together.
  4. Mix the egg and milk mixture into the flour mix until combined and smooth.
  5. Let sit for 10 minutes.
  6. Spray a baking pan with nonstick and scoop batter on to the baking sheet. You can make large or small biscuits. The will puff up a little bit, so leave 1 inch in between them.
  7. Bake for 16 minutes.
  8. Let cool for 5 minutes before serving.
Recipe Notes
  • Consider adding dried cherries or blueberries to the recipe before baking.
  • Consider adding a tablespoon of parsley, a teaspoon of garlic powder, and a tablespoon of shredded cheddar to make some savory biscuits.
